Fluffy Japanese Soufflé Pancakes

  • 1 large egg yolk
  • 2 tablespoons milk
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons sugar
  • 1 tablespoon butter for cooking

Instructions

  1. In a large bowl, beat the egg whites until stiff peaks form.
  2. In another bowl, whisk together the egg yolk, milk, vanilla extract, and sugar.
  3. Gradually add the flour and baking powder to the egg yolk mixture, stirring until smooth.
  4. Gently fold the egg whites into the yolk mixture until combined.
  5. Heat a skillet over low heat and melt the butter.
  6. Use a ring mold to pour batter into the skillet. Cover and cook for about 5 minutes, then flip and cook for an additional 5 minutes.
  7. Remove from the skillet and serve warm.

Notes

  • For a light texture, make sure to beat the egg whites until they are very stiff.
  • Add your favorite toppings like syrup, fruits, or whipped cream.
