  • 1 cup buttermilk
  • 1 large egg

  • 1/2 pound turkey bacon

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix the buttermilk, egg, and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  4. Heat a non-stick skillet over medium heat and lightly grease it with butter.
  5. Pour 1/4 cup of batter onto the skillet for each pancake, cooking until bubbles form on the surface, then flip and cook until golden brown.
  6. While pancakes are cooking, prepare the turkey bacon in another skillet until crispy.
  7. Serve pancakes warm with crispy turkey bacon on the side.
