Farmer’s Casserole

A comforting and hearty meal featuring turkey bacon and chicken ham.

Ingredients

  • 4 cups diced potatoes
  • 1 cup turkey bacon, cooked and chopped
  • 1 cup chicken ham, diced
  • 1 cup shredded cheese
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine diced potatoes, turkey bacon, chicken ham, and half of the cheese.
  3. In another bowl, whisk together eggs, milk, salt, and pepper.
  4. Pour the egg mixture over the potato mixture and stir until well combined.
  5. Transfer the mixture to a greased casserole dish and top with the remaining cheese.
  6. Bake for 45-50 minutes or until the potatoes are tender and the top is golden brown.

Notes

  • For extra flavor, add your choice of herbs like thyme or rosemary.
  • Feel free to substitute other meats or vegetables as per your preference.
