  • 2 cups beef broth
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 can (14oz) diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, and sauté until translucent.
  3. Add the cubed beef and brown on all sides.
  4. Stir in the cumin, paprika, salt, and pepper.
  5. Add diced tomatoes and beef broth. Bring to a boil, then reduce the heat and simmer for 1.5 hours.
  6. Check for seasoning and adjust as necessary.
