Easy Thai Coconut Curry Dumpling Soup

  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tablespoon ginger minced
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 cups mixed vegetables (carrots, bell pepper, etc.)
  • 1 package dumplings (frozen or homemade)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add diced onion, garlic, and ginger, sauté until tender.
  3. Stir in red curry paste and cook for another minute.
  4. Add vegetable broth and coconut milk; bring to a simmer.
  5. Add mixed vegetables and dumplings; cook according to dumpling package instructions.
  6. Finish with soy sauce and lime juice.
  7. Serve hot, garnished with cilantro.
