Easy Stuffed Bell Peppers Recipe

An easy and healthy stuffed bell peppers recipe featuring turkey and bacon.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup cooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the turkey bacon until crispy, then remove and chop.
  4. In the same skillet, cook the ground turkey until browned.
  5. Add onion, garlic, Italian seasoning, salt, and pepper to the turkey. Stir in the cooked rice and chopped bacon.
  6. Stuff the mixture into each bell pepper, top with mozzarella cheese.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 25 minutes, then remove foil and bake for an additional 10 minutes.
  9. Serve hot and enjoy!

  • For added flavor, you can use different types of cheese.
  • Feel free to add vegetables like corn or black beans.
