- 4 large bell peppers
- 1 pound ground turkey
- 4 slices turkey bacon
- 1 cup cooked rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the turkey bacon until crispy, then remove and chop.
- In the same skillet, cook the ground turkey until browned.
- Add onion, garlic, Italian seasoning, salt, and pepper to the turkey. Stir in the cooked rice and chopped bacon.
- Stuff the mixture into each bell pepper, top with mozzarella cheese.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25 minutes, then remove foil and bake for an additional 10 minutes.
- Serve hot and enjoy!
