Easy Miso Soup

Ingredients

  • 4 cups vegetable broth
  • 3 tablespoons miso paste
  • 4 strips turkey bacon, chopped
  • 1 cup tofu, diced
  • 1 cup green onions, sliced
  • 1 cup mushrooms, sliced
  • 1/2 cup spinach, chopped
  • 2 cloves garlic, minced

Instructions

  1. In a large pot, cook the chopped turkey bacon over medium heat until crispy.
  2. Add the minced garlic and sauté for an additional minute.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Dissolve the miso paste in a small amount of the broth and stir it back into the pot.
  5. Add the mushrooms, tofu, and spinach; cook for 5-7 minutes until vegetables are tender.
  6. Stir in sliced green onions just before serving.

Notes

  • For extra flavor, add a splash of soy sauce.
  • Adjust the amount of miso paste to your taste preference.
