  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 red bell pepper, chopped
  • 2 cups spinach
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, sautéing until translucent.
  3. Stir in the cumin and paprika, cooking for an additional minute.
  4. Add the lentils, vegetable broth, diced tomatoes, and red bell pepper. Bring to a boil.
  5. Reduce the heat and simmer for 25-30 minutes, or until lentils are tender.
  6. Stir in the spinach and lemon juice. Season with salt and pepper to taste.
