  • 1/2 cup spiced rum
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 12 gingerbread cookies
  • 1/4 cup cocoa powder

Instructions

  1. In a bowl, combine brewed coffee and spiced rum.
  2. In another bowl, whip the heavy cream, powdered sugar, vanilla extract, ground ginger, and ground cinnamon until soft peaks form.
  3. Gently fold in the mascarpone cheese into the whipped cream mixture.
  4. Dip each gingerbread cookie briefly in the coffee mixture and layer them in a dish.
  5. Spread a layer of the mascarpone mixture over the cookies and repeat layers until all ingredients are used.
  6. Refrigerate for at least 4 hours before serving.

Notes

  • You can substitute the spiced rum with any flavored liqueur or omit it for a non-alcoholic version.
  • For a stronger coffee flavor, increase the amount of brewed coffee used.
