Dump-and-Bake Chicken Tzatziki Rice

An easy and delicious comfort meal that combines chicken, tzatziki, and rice in a simple dump-and-bake method.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup tzatziki sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, combine the rice, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Add the chicken breasts on top of the rice mixture and drizzle with olive oil.
  4. Cover the baking dish with aluminum foil and bake for 25-30 minutes.
  5. Remove from the oven, uncover, and add the tzatziki sauce over the chicken.
  6. Return to the oven and bake for an additional 10-15 minutes until the chicken is cooked through.
  7. Let it rest for a few minutes before serving.

Notes

  • Feel free to add vegetables like spinach or bell peppers for added nutrition.
