  • 2 cups finely chopped mushrooms
  • 1 cup cooked lentils
  • 1/2 cup breadcrumbs
  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, sauté the mushrooms and garlic until browned.
  3. In a bowl, combine the sautéed mushrooms, cooked lentils, breadcrumbs, nutritional yeast, soy sauce, Italian seasoning, salt, and pepper.
  4. Mix well and form into balls.
  5. Place the meatballs on a baking sheet and drizzle with olive oil.
  6. Bake for 25-30 minutes, or until golden brown.
