Delicious Chicken Enchiladas

A simple and delicious chicken enchiladas recipe that the whole family will love.

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup sour cream
  • 1/4 cup chopped onion

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the chicken, enchilada sauce, and half of the cheese.
  3. Warm the tortillas on a skillet until soft.
  4. Spoon the chicken mixture into each tortilla and roll them up.
  5. Place the rolled tortillas in a baking dish and top with remaining cheese.
  6. Bake for 20 minutes or until the cheese is bubbly.
  7. Serve with sour cream and chopped onion on top.

Notes

  • Feel free to add beans or vegetables to the filling for extra flavor.
