Crock Pot Crack Potato Soup

A hearty and comforting soup made with potatoes and turkey bacon.

  • 6 cups diced potatoes
  • 1 cup turkey bacon, cooked and crumbled
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. In a Crock Pot, combine the diced potatoes, turkey bacon, chicken broth, onion, garlic, salt, pepper, and paprika.
  2. Cover and cook on low for 6 hours or until the potatoes are tender.
  3. Once cooked, stir in the heavy cream and cheddar cheese until melted.
  4. Serve warm, garnished with additional turkey bacon and cheese if desired.

Notes

  • For a thicker soup, mash some of the potatoes before adding the cream and cheese.
  • Feel free to add other vegetables like carrots or celery for additional flavor.
