Creamy White Bean

A delicious and creamy dish featuring white beans, turkey bacon, and fresh herbs.

Ingredients

  • 2 cups white beans
  • 4 slices turkey bacon
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • 4 cups vegetable broth
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add olive oil, onions, and garlic to the pot and sauté until translucent.
  3. Add the white beans, vegetable broth, thyme, rosemary, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Blend the mixture until creamy, add crumbled turkey bacon back in, and serve hot.

Notes

  • For extra creaminess, blend a portion of the beans.
