Creamy Tomato Basil Soup

  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups fresh tomatoes, chopped
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1 cup fresh basil leaves
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Add olive oil, onion, and garlic to the pot; sauté until fragrant.
  3. Add chopped tomatoes and vegetable broth; bring to a simmer.
  4. Stir in sugar and season with salt and pepper.
  5. Once tomatoes are tender, blend the mixture until smooth.
  6. Add basil leaves and cream; stir well and heat through.
  7. Serve warm, topped with crumbled turkey bacon.
