Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (28 ounces) crushed tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and cook for another minute.
  3. Stir in crushed tomatoes, vegetable broth, sugar, salt, and black pepper. Bring to a simmer.
  4. Reduce heat and let it simmer for 20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in heavy cream and chopped basil, then heat through.
  7. Serve warm with fresh basil on top.

Notes
