Creamy Tomato Basil Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups diced tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 cup fresh basil, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until soft.
  3. Stir in the diced tomatoes and vegetable broth.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in the heavy cream and basil, then season with salt and pepper.
  6. Use an immersion blender to blend until smooth, or carefully blend in batches.
  7. Serve hot, garnished with additional basil if desired.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • For a dairy-free version, substitute heavy cream with coconut cream.
