Creamy Tomato Basil Soup

Ingredients

  • 2 cups fresh basil leaves
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups diced tomatoes (canned or fresh)
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until translucent.
  2. Add diced tomatoes and vegetable broth; bring to a boil. Reduce heat and simmer for 20 minutes.
  3. Add fresh basil and heavy cream; blend the mixture until smooth.
  4. Season with salt and pepper to taste. Serve hot.

Notes

  • For a vegan version, substitute heavy cream with coconut milk.
