Creamy Tomato Basil Soup

A delicious creamy tomato basil soup that is perfect for any age!

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (14.5 ounces each) diced tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup fresh basil leaves, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in garlic and cook for an additional minute.
  4. Add diced tomatoes and vegetable broth, and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in heavy cream, basil, salt, and pepper.
  8. Heat through and serve hot.
