Creamy Lasagna Soup

A rich and flavorful lasagna soup with turkey bacon, offering a comforting meal perfect for any occasion.

  • 8 ounces lasagna noodles
  • 6 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup chopped fresh basil

Instructions

  1. Cook the lasagna noodles according to package instructions; drain and set aside.
  2. In a large pot, cook the turkey bacon until crispy. Remove and chop into pieces.
  3. Add olive oil, onion, and garlic to the pot; sauté until the onion is translucent.
  4. Stir in crushed tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Bring to a boil.
  5. Add the cooked lasagna noodles and turkey bacon back into the pot. Simmer for 10 minutes.
  6. Stir in ricotta cheese and half of the mozzarella cheese. Simmer until the cheese is melted.
  7. Garnish with remaining mozzarella and chopped basil before serving.

Notes

  • Add more vegetables like spinach or mushrooms for extra nutrition.
  • You can substitute ground turkey for an even heartier version.
