This creamy lasagna soup is the perfect indulgent comfort food, combining all the flavors of traditional lasagna in a cozy soup form.

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 12 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the ground beef, onion, and garlic over medium heat until the meat is browned.
  2. Add the crushed tomatoes, beef broth, and Italian seasoning. Bring to a boil.
  3. Add the broken lasagna noodles and cook until tender, about 10 minutes.
  4. Stir in the ricotta cheese and half of the mozzarella cheese until well combined.
  5. Serve hot, garnished with the remaining mozzarella and Parmesan cheese.
