  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups beef broth
  • 1 tablespoon Italian seasoning
  • 12 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned. Add the onion and garlic, cooking until softened.
  2. Stir in the crushed tomatoes, beef broth, and Italian seasoning. Bring to a simmer.
  3. Add the broken lasagna noodles and cook until tender, about 10 minutes.
  4. Stir in the ricotta cheese, mozzarella, and Parmesan until melted and creamy.
  5. Add the spinach and cook until wilted. Season with salt and pepper to taste.
  6. Serve hot, garnished with additional cheese if desired.
