  • 2 pounds beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 tablespoons flour
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat and brown the beef cubes.
  2. Add the chopped onions and garlic, cooking until softened.
  3. Stir in the paprika and caraway seeds, cooking for another minute.
  4. Pour in the beef broth and bring to a simmer. Cover and cook for about 1.5 to 2 hours until the beef is tender.
  5. In a small bowl, mix the flour with a little water to create a slurry, then stir into the pot.
  6. Reduce heat and stir in the heavy cream. Simmer for an additional 10 minutes.
  7. Season with salt and pepper to taste, and garnish with fresh parsley before serving.

  • For a thicker sauce, let the goulash simmer uncovered for the last 10 minutes.
