  • 2 cups wild rice
  • 1 pound chicken breasts
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup carrots, diced
  • 1 cup celery, diced

Instructions

  1. In a crockpot, add the wild rice, chicken breasts, and turkey bacon.
  2. Add the chopped onion, minced garlic, carrots, and celery.
  3. Pour in the chicken broth, thyme, pepper, and salt. Stir to combine.
  4. Cover and cook on low for 6-7 hours or until the chicken is cooked through.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Stir in the heavy cream and cook for an additional 30 minutes.
  7. Serve hot, garnished with extra bacon if desired.

Notes

  • For a thicker soup, add more cream or reduce the chicken broth.
  • Leftovers taste even better the next day!
