- 2 cups wild rice
- 1 pound chicken breasts
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 teaspoons dried thyme
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 cup carrots, diced
- 1 cup celery, diced
- In a crockpot, add the wild rice, chicken breasts, and turkey bacon.
- Add the chopped onion, minced garlic, carrots, and celery.
- Pour in the chicken broth, thyme, pepper, and salt. Stir to combine.
- Cover and cook on low for 6-7 hours or until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the heavy cream and cook for an additional 30 minutes.
- Serve hot, garnished with extra bacon if desired.
