  • 1 cup wild rice
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 1 cup celery, chopped
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup heavy cream
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a crockpot, combine chicken, wild rice, onion, garlic, chicken broth, carrots, celery, thyme, and rosemary.
  2. Cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
  3. Shred the chicken and return it to the crockpot.
  4. Stir in heavy cream and parsley before serving.

Notes

  • You can use frozen vegetables if short on time.
