Creamy Crockpot Chicken Wild Rice Soup

Ingredients

  • 1 pound chicken breasts
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. Place chicken, wild rice, broth, carrots, celery, onion, garlic, thyme, and rosemary in the crockpot.
  2. Cook on low for 6-8 hours or high for 4-5 hours.
  3. Remove chicken, shred, and return it to the pot.
  4. Stir in heavy cream, and season with salt and pepper before serving.

Notes

  • For extra creaminess, blend some of the soup before adding the cream.
  • This soup can be made ahead of time and stored in the refrigerator.
