  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) crushed tomatoes
  • 4 cups chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  2. Stir in shredded chicken and crushed tomatoes, cooking for 2-3 minutes.
  3. Add chicken broth and bring to a boil.
  4. Add broken lasagna noodles and cook until tender, about 10 minutes.
  5. Reduce heat and stir in heavy cream, ricotta, and mozzarella until melted and smooth.
  6. Season with Italian seasoning, salt, and pepper.
  7. Serve hot, garnished with additional cheese if desired.
