  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cilantro, chopped (optional)

Instructions

  1. In a large pot, sauté onions and garlic until soft.
  2. Add the shredded chicken, chicken broth, and enchilada sauce, bringing it to a boil.
  3. Reduce heat and stir in cream, corn, black beans, and spices.
  4. Let simmer for 10-15 minutes.
  5. Serve warm, garnished with cilantro if desired.

Notes

  • You can use rotisserie chicken for convenience.
  • Adjust the spice level by adding more chili powder or jalapeños.
