  • 1 pound fresh mushrooms, sliced
  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon thyme

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped turkey bacon and cook until crispy.
  2. Add diced onion and minced garlic. Sauté until the onion is translucent.
  3. Add sliced mushrooms and cook until they release moisture and become tender.
  4. Pour in chicken broth and bring to a boil. Reduce heat and let simmer for 15 minutes.
  5. Stir in heavy cream and season with salt, black pepper, and thyme. Cook for another 5 minutes.
  6. Blend the soup until smooth if desired, then serve hot.

Notes

  • For a lighter version, you can substitute the heavy cream with half-and-half.
  • Serve with crusty bread for dipping.
