- 1 pound fresh mushrooms, sliced
- 4 slices turkey bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- 1 teaspoon thyme
- In a large pot, heat olive oil over medium heat. Add chopped turkey bacon and cook until crispy.
- Add diced onion and minced garlic. Sauté until the onion is translucent.
- Add sliced mushrooms and cook until they release moisture and become tender.
- Pour in chicken broth and bring to a boil. Reduce heat and let simmer for 15 minutes.
- Stir in heavy cream and season with salt, black pepper, and thyme. Cook for another 5 minutes.
- Blend the soup until smooth if desired, then serve hot.
