Comforting Thai Potsticker Soup

  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 6 cups chicken or vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 pound potstickers (frozen or homemade)
  • 2 cups bok choy, chopped
  • 1 cup mushrooms, sliced
  • 2 green onions, sliced
  • 1 tablespoon lime juice

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add garlic and ginger, sauté until fragrant.
  3. Pour in the broth and bring to a simmer.
  4. Add soy sauce and fish sauce.
  5. Stir in potstickers and cook for 5-7 minutes.
  6. Add bok choy, mushrooms, and green onions; cook for an additional 3-4 minutes.
  7. Finish with lime juice and serve hot.
