Comforting French Onion Pot Roast

  • 3 pounds beef chuck roast
  • 4 slices turkey bacon
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, cook turkey bacon until crispy. Remove and set aside.
  3. In the same pot, brown the beef chuck roast on all sides.
  4. Add sliced onions and minced garlic, sauté until softened.
  5. Return the turkey bacon to the pot, add beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  6. Cover and transfer to the oven. Cook for 3-4 hours until the beef is tender.
  7. Remove from oven, let rest, and slice before serving.
