Comforting Classic Split Pea Soup

A warm and hearty soup that is perfect for cold days.

Ingredients

  • 1 cup split peas
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and chop.
  2. Add onions, carrots, and celery to the pot and sauté until soft.
  3. Add in the split peas, chicken broth, garlic powder, thyme, and bacon. Bring to a boil.
  4. Reduce heat and simmer for about 45 minutes until peas are tender.
  5. Use an immersion blender to puree the soup to desired consistency.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
  • Feel free to add other vegetables like potatoes or bell peppers.
