Coffee Cake Muffins

Indulge in the comforting blend of coffee and cake with these easy-to-make coffee cake muffins.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tray with paper liners.
  2. In a bowl, mix together the flour, sugars, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat the butter and eggs until fluffy. Stir in the vanilla and sour cream.
  4. Gradually combine the wet and dry ingredients, mixing until just blended. Fold in nuts if using.
  5. Fill the muffin liners ¾ full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow to cool slightly before removing from the tray.

Notes

  • For extra flavor, add a sprinkle of cinnamon sugar on top before baking.
  • These muffins can be enjoyed warm or at room temperature.
