Coconut Tiramisu

Coconut Tiramisu is a delightful variation on the traditional Italian dessert, combining the rich flavor of coconut with the creamy texture of mascarpone cheese.

  • 1 cup coconut milk
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • 1 cup brewed coffee, cooled
  • 1/2 cup shredded coconut, toasted

Instructions

  1. In a bowl, whisk together coconut milk, mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  2. Dip ladyfinger cookies in the cooled coffee quickly, less than a second on each side.
  3. Layer half of the dipped ladyfingers at the bottom of a dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  6. Sprinkle toasted shredded coconut on top.
  7. Refrigerate for at least 4 hours before serving.

Notes

  • For an extra coconut flavor, add a tablespoon of coconut rum to the mascarpone mixture.
  • This dessert can be prepared a day in advance for better flavor integration.
