Classic Crème Anglaise

  • 1 cup whole milk
  • 1 cup granulated sugar
  • 6 large egg yolks
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, combine the heavy cream and milk over medium heat. Stir occasionally until the mixture is hot, but not boiling.
  2. In a separate bowl, whisk together the sugar and egg yolks until the mixture is pale and creamy.
  3. Slowly add the hot cream mixture to the egg yolk mixture, stirring constantly to temper the eggs.
  4. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
  5. Remove from heat and stir in the vanilla extract.
  6. Strain the mixture through a fine-mesh sieve into a bowl to remove any curdled bits.
  7. Let it cool completely before serving.
