  • 2 1/4 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup baking soda
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sugar (for topping)
  • 1 tablespoon ground cinnamon

Instructions

  1. In a large bowl, combine warm water and sugar. Sprinkle yeast on top and let it sit for about 5 minutes until foamy.
  2. Add flour and salt, mixing until combined. Knead for about 5 minutes until smooth. Let rise in a warm place for 1 hour.
  3. Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
  4. In a pot, bring 10 cups of water to a boil and add baking soda.
  5. Divide the dough into 12 pieces and roll each into a long rope. Shape into pretzels.
  6. Boil each pretzel for 30 seconds, then place on the baking sheet.
  7. Brush with melted butter and mix sugar with cinnamon for sprinkling on top.
  8. Bake for about 12-15 minutes until golden brown. Let cool slightly before serving.

Notes

  • For a more intense flavor, let the dough rise overnight in the refrigerator.
