  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together pumpkin puree, sugar, eggs, and vegetable oil.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Combine the wet and dry ingredients, adding milk as needed to create a smooth batter.
  5. Using a small scoop, drop batter onto a greased baking sheet.
  6. Bake for 10-12 minutes until golden brown.
  7. Allow to cool slightly, then roll in cinnamon sugar.
