  • 4 large eggs

  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a big bowl, mix together grated carrots and crushed pineapple.
  3. In another bowl, beat together sugar, oil, and eggs until smooth.
  4. Combine the wet ingredients with the carrot mixture.
  5. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  6. Slowly mix the dry ingredients into the wet mixture until just combined.
  7. If using, fold in chopped walnuts.
  8. Pour the batter into a greased cake pan.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let the cake cool before serving.
