- 1 cup grated zucchini
- 1 cup gluten-free all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chocolate chips
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract until well combined.
- In another bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chocolate chips.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
