Chocolate Zucchini Muffins – Gluten Free

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chocolate chips.
  5. Divide the batter evenly among the prepared muffin cups.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
