  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix the grated zucchini with sugar, brown sugar, and oil until well combined.
  3. Add in the eggs and vanilla extract, mixing thoroughly.
  4. In a separate bowl, combine cocoa powder, flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let the bread cool before slicing.

Notes

  • For an extra chocolatey flavor, add more chocolate chips.
  • Make sure to squeeze out excess moisture from the zucchini before mixing.
