Chocolate Raspberry Cheesecake

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh raspberries
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the chocolate cookie crumbs and melted butter until well combined. Press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and vanilla extract, mixing until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until smooth.
  5. Fold in the fresh raspberries and chocolate chips gently.
  6. Pour the filling over the crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set but slightly jiggly.
  8. Remove from the oven and let cool. Refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, use dark chocolate cookie crumbs.
  • Feel free to top with additional raspberries or chocolate sauce before serving.
