- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup fresh raspberries
- ½ cup chocolate chips
- Preheat the oven to 325°F (160°C).
- In a bowl, mix the chocolate cookie crumbs and melted butter until well combined. Press the mixture into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until smooth.
- Fold in the fresh raspberries and chocolate chips gently.
- Pour the filling over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set but slightly jiggly.
- Remove from the oven and let cool. Refrigerate for at least 4 hours before serving.
