  • 1/2 cup butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 8 ounces dark chocolate, melted
  • 1/2 cup cocoa powder

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine chocolate cookie crumbs and melted butter; mix well and press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, mixing thoroughly after each addition.
  4. Stir in the melted dark chocolate and cocoa powder until well combined.
  5. Pour the cheesecake filling over the crust in the springform pan.
  6. Bake for 55-60 minutes or until the center is set but still slightly jiggly.
  7. Remove from oven and let cool. Refrigerate for at least 4 hours or overnight before serving.
