Chipotle Gouda Scalloped Sweet Potatoes

A delicious and creamy side dish featuring sweet potatoes and smoky chipotle gouda.

Ingredients

  • 4 medium sweet potatoes
  • 2 cups shredded chipotle gouda cheese
  • 1 cup heavy cream
  • 1/2 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a baking dish with butter.
  3. Slice the sweet potatoes thinly and arrange half in the dish.
  4. In a bowl, mix the cream, milk, garlic, paprika, salt, and pepper.
  5. Pour half of the cream mixture over the sweet potatoes.
  6. Add half of the shredded cheese on top.
  7. Repeat the layers with the remaining sweet potatoes, cream mixture, and cheese.
  8. Cover with aluminum foil and bake for 45 minutes.
  9. Remove the foil and bake for an additional 15 minutes until golden and bubbly.

Notes

  • For extra smoky flavor, add a few drops of chipotle sauce.
  • Let the dish rest for a few minutes before serving for easier slicing.
