  • 1 cup cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup spinach, chopped
  • 1/2 cup diced jalapeños
  • 1 cup cheese, shredded
  • 1 egg roll wrappers
  • 1 cup oil for frying

Instructions

  1. In a large bowl, combine cooked chicken, black beans, corn, spinach, jalapeños, and cheese.
  2. Lay an egg roll wrapper on a flat surface with a corner facing you.
  3. Place a few tablespoons of the filling mixture in the center of the wrapper.
  4. Fold the corner up over the filling, then fold in the sides and roll tightly.
  5. Heat oil in a deep pan over medium heat.
  6. Carefully add eggrolls to the hot oil and fry until golden brown, about 3-4 minutes.
  7. Remove and drain on paper towels before serving.
