Chicken Pozole Verde Soup

  • 1 pound chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 2 cups hominy, drained and rinsed
  • 1 cup tomatillos, husked and chopped
  • 1 jalapeño, seeded and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt to taste
  • 2 cups chopped cabbage
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and jalapeño. Sauté until softened, about 5 minutes.
  2. Add the minced garlic, cumin, and oregano. Cook for another minute, stirring frequently.
  3. Add the chicken thighs to the pot and pour in the chicken broth. Bring to a boil.
  4. Reduce heat to a simmer, cover the pot, and cook for about 20 minutes or until the chicken is cooked through.
  5. Remove the chicken, shred it using two forks, and return it to the pot.
  6. Add the tomatillos and hominy. Simmer for an additional 10 minutes.
  7. Stir in the chopped cabbage and season with salt to taste. Cook for a further 5 minutes.
  8. Serve hot with lime wedges on the side.

Notes

  • For extra flavor, add avocado, radishes, or cilantro as toppings before serving.
  • This soup can be made a day ahead and tastes even better the next day.
