- 1 tablespoon olive oil
- 1 pound chicken thighs, boneless and skinless
- 4 cups chicken broth
- 2 cups hominy, drained and rinsed
- 1 cup tomatillos, husked and chopped
- 1 jalapeño, seeded and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt to taste
- 2 cups chopped cabbage
- 1 lime, cut into wedges
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and jalapeño. Sauté until softened, about 5 minutes.
- Add the minced garlic, cumin, and oregano. Cook for another minute, stirring frequently.
- Add the chicken thighs to the pot and pour in the chicken broth. Bring to a boil.
- Reduce heat to a simmer, cover the pot, and cook for about 20 minutes or until the chicken is cooked through.
- Remove the chicken, shred it using two forks, and return it to the pot.
- Add the tomatillos and hominy. Simmer for an additional 10 minutes.
- Stir in the chopped cabbage and season with salt to taste. Cook for a further 5 minutes.
- Serve hot with lime wedges on the side.
Notes
