  • 1 pound chicken breast, diced
  • 4 ounces turkey bacon, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 3 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add olive oil and sauté onions, carrots, and celery until tender.
  3. Add diced chicken and cook until no longer pink.
  4. Stir in flour and cook for 1 minute.
  5. Gradually add chicken broth, potatoes, garlic powder, thyme, salt, and pepper. Bring to a boil.
  6. Reduce heat and simmer until potatoes are soft.
  7. Add frozen peas and heavy cream; mix well.
  8. Serve topped with crispy turkey bacon.

Notes

  • For added flavor, use homemade chicken broth.
  • This soup can be made ahead of time and reheated.
