4 slices turkey bacon
1 cup diced carrots
1 cup diced celery
1 cup diced potatoes
1 teaspoon dried thyme
1 teaspoon garlic powder
4 cups chicken broth
2 cups shredded cooked chicken
1 cup heavy cream
1/4 cup all-purpose flour
1/2 cup frozen peas
salt and pepper to taste
Instructions
In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
In the same pot, add carrots, celery, and potatoes. Sauté until tender.
Add thyme and garlic powder, and stir to combine.
Pour in chicken broth and bring to a boil. Reduce heat and let simmer.
In a separate bowl, whisk together heavy cream and flour until smooth.
Slowly add the cream mixture to the soup, stirring continuously until the soup thickens.
Add the shredded chicken, frozen peas, and season with salt and pepper.
Serve hot, garnished with crumbled turkey bacon.
Notes
For a lighter version, use turkey instead of bacon.
