  • 4 ounces turkey bacon, chopped
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups diced potatoes
  • 1 cup frozen peas and carrots
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Add the onions and garlic; sauté until onions are translucent.
  3. Pour in the chicken broth and add the diced potatoes.
  4. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Add the frozen peas and carrots, thyme, and heavy cream. Stir well and let heat through.
