Chicken Burrito Casserole

A delicious chicken burrito casserole that combines all the fantastic flavors of a burrito in an easy-to-make dish, perfect for busy weeknights.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups cooked rice
  • 2 cups shredded cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 6 flour tortillas

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the chicken, black beans, corn, salsa, rice, half of the cheese, chili powder, and cumin.
  3. Spread a thin layer of the mixture in the bottom of a baking dish.
  4. Layer three tortillas over the mixture, then add another layer of the filling.
  5. Top with the remaining tortillas and spread with the rest of the filling.
  6. Finish with the remaining cheese on top.
  7. Bake for 25-30 minutes or until the cheese is melted and bubbly.

Notes

  • Feel free to add other favorite ingredients such as jalapeños or bell peppers.
  • For a spicier version, use spicy salsa.
