- 2 cups cooked shredded chicken
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups cooked rice
- 2 cups shredded cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 6 flour tortillas
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the chicken, black beans, corn, salsa, rice, half of the cheese, chili powder, and cumin.
- Spread a thin layer of the mixture in the bottom of a baking dish.
- Layer three tortillas over the mixture, then add another layer of the filling.
- Top with the remaining tortillas and spread with the rest of the filling.
- Finish with the remaining cheese on top.
- Bake for 25-30 minutes or until the cheese is melted and bubbly.
Notes
- Feel free to add other favorite ingredients such as jalapeños or bell peppers.
- For a spicier version, use spicy salsa.
