- 2 pounds baby potatoes
- 1 cup shredded cheddar cheese
- 1 packet ranch dressing mix
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1 tablespoon olive oil
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, combine the potatoes, ranch dressing mix, olive oil, and sour cream; mix until evenly coated.
- Spread the mixture onto a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, or until potatoes are tender and golden brown.
- Remove from the oven and sprinkle with cheddar cheese and green onions. Bake for an additional 5 minutes until the cheese is melted.
